
BASIL PARSLEY PESTO: THE MOST VERSATILE CONDIMENT
A jar of pesto has to be one of the most versatile things to have sitting in your fridge. Readily available to purchase from supermarkets and delis, it’s easy to go down the store bought path. We guarantee that when you whizz a batch of our pesto in your food processor, you will never opt to buy a jar again. Pesto has to be one of the easiest and quickest things to make, and the secret to creating a perfect pesto is using the best quality ingredients. The freshest herbs, a beautiful quality Pecorino or Parmesan cheese, and a great quality salt like Maldon Sea Salt.
This pesto is perfect through a pasta, or for flavouring a piece of steak or chicken. It is also beautiful tossed through a salad, or used as a dip to accompany a board of stunning vegetables. When we make a batch, we tend to smother it on just about everything!


Ingredients
50g parsley leaves
50g basil leaves
2 garlic cloves, roughly chopped
50g pine nuts, toasted
4 grinds of Maldon Sea Salt Flakes
185ml Extra Virgin Olive Oil
80g good quality Pecorino or Parmesan cheese
Instructions
1. Place the parsley, basil, garlic, salt and pine nuts in a food processor. With the motor running, add the oil in a steady stream until all the ingredients have combined well, and the consistency is still a little chunky.
2. Transfer to a bowl and stir in the Pecorino or Parmesan cheese. Season with additional salt, to taste. Store in a sealed jar in the fridge.
